The 13″-diameter braiser is terrific for pot roast or osso bucco. The 10″-diameter size is great for bean dishes and braised vegetables. Designed for slow cooking in a small amount of liquid, it has a wide, flat bottom for quick browning, sloped sides to concentrate the cooking liquid, and a domed lid to capture flavor and nutrients. I use this for cooking, not for displaying, so I don’t mind the scratches. I have quite a few All-Clad pots and pans, and this is by far my favorite! This pan paired with Molly Stevens “All About Braising” cookbook make an impressive meal that your dinner guests will rave about!

All-Clad Master Chef 2 10-Inch Petite Braiser Pan Review
The shape and size of the pan itself is exactly the same as a 10-inch fry pan, just without the long handle. I have used it to braise, making paella and saute in it like a fry pan. Without the long handle that a fry pan has, of course it is not as convenient if you want to shake and stir. But this is my only All-Clad, my first trial piece. I love it. Planning to add more pieces to my collection. This Braiser Pan is beautiful to serve in it. Great heat conductivity and easy to clean. I was recommended the MC2 over all stainless steel by the shopkeeper because, if hand washing is not a chore for you, the outer layer in MC2 is thicker aluminum and thus heats slightly faster …
